Recipe: Quick and Simple Cheese Fondue

If you’re like me, finding simple but delicious recipes that don’t take long to prepare can be a saviour on a Friday night. This week we wanted to do something special, but without a lot of effort, so we pulled out the fondue pot for a fun and easy meal (that’s great for kids!).

Ingredients

Feeds 3-4 people

Fondue

  • 200g Gruyère cheese (grated)
  • 100g Maasdam cheese (grated)
  • 200ml Heavy cream
  • 4oz White wine (any)
  • Salt & pepper to taste

Dippers

  • Broccoli
  • Small sausage
  • Chicken
  • Zucchini
  • Red & Green peppers
  • Salt & pepper to taste

Preparation

You can choose just about anything to dip into your fondue, these are my suggestions. (You can see from the photo that last time I used chorizo, mushrooms, broccolini, and peppers.)

  1. Heat a frying pan to medium heat. Prepare the chicken and sausage: season with salt and pepper, chop into small bite size pieces, and sauté.
  2. Remove the meats and keep them near by to re-heat when the cheese mixture is complete.
  3. Chop the zucchini into sticks and lightly sauté. Don’t over cook as they will get mushy and hard to handle with the fondue sticks.
  4. Heat a 4-quart pot on medium heat, don’t add any oil as the cheese is full of oil, there will be not sticking. Add the first 100g of Gruyère and 100g of Maasdam.
  5. Mix in the white wine and 1/2 of the heavy cream. Keep stirring to ensure all of the cheese melts.
  6. Add the rest of the heavy cream when the cheese has melted and begin adding the last 100g of Gruyère. Make sure that the consistency is not too liquid, nor too solid. You want a smooth, almost paste like texture.
  7. Let the cheese mixture simmer on low heat while you reheat the meats. Plate the meats, cooked zucchini and raw broccoli.
  8. Heat your fondue pot (I was able to find a combustible gel from the supermarket specifically for fondue pots, but you can also use a sterno or large tea light candle) and transfer the cheese mixture into it.

The cheese will start to boil again, after a 4-5 minutes you can put out the fire and reignite it midway through the meal with the cheese starts to cool. It will remain hot for quite a while.
